Current Research

"Probing the Molecular Structure of Water at the Interface with RG-II Polysaccharide" under the supervision of Dr. Gabriele C. Sosso at the University of Warwick Chemistry department . This is a 20 week project which forms part of the MSc in Molecular Analytical Sciences. I am investigating the properties of the RG-II backbone at the interface with ice. RG-II is a constituent part of pectin and has a ten unit long polysaccharide backbone composed of galacturonic acid, with the potential to exhibit Ice Recrystallization Inhibition properties. The aim of this project is to discover the interplay between water and backbone interface at supercooling, which will hopefully give us further clues to the inhibition activity of the backbone and the RG-II structure itself.
